Raw Zucchini & Kale salad

I have come to just LOVE this salad.  The base is really simple.  Use your food processor chopping blade to finely chop a leaf or two of Kale (use kitchen scissors to remove the leaves from the thick stem).  Next change to the shredder disc and shred a small zucchini.  Toss with olive oil, coarse sea salt, and lemon juice. Add whatever ingredients are in your co-op box or on your food rotation for the day. Today I chopped a nectarine and threw it into the mix and topped it all off with sliced boiled eggs.  You can add tomato, cucumber, berries, nuts/seeds, avocado… whatever!
