Warm Apples & Spiced Nuts

It is about 40 degrees here in Houston, Texas today and my hubby has been out of town all weekend.  I wanted to make him a warm sweet treat to welcome him home (along with a tons of kisses :).   Last night the girls came over for some DIY facials and a TON of food!  My sister in law, Gena, made some spiced nuts that she got from the Paleo Comfort Foods Cookbook.  The base recipe is pretty simple.  A variety of nuts sautéed in butter or coconut oil and a mix of spices (we used cumin, red chili powder, cinnamon, smoked paprika, cumin, vanilla, and salt) we added a few copped fresh dates as well.  YUM!!!  I also had a huge bowl of apples from my co-op this week, Rawfully Organic.  Here we go…

This one is really simple.  Core and dice 2-3 organic apples (I used 1 green, 1 honey crisp and 1 fuji – that is just what I had here!)  Sauté the apples over medium heat with butter and/or coconut oil for 5-10 minutes until desires softness.  Toss in a few handfuls of the spiced nuts (I chopped mine a bit in the food processor) and continue to sauté a minute or so to combine flavors.  ENJOY!!!

You could totally get creative with this.  Use pears.  Add coconut flakes.  Serve over paleo-ice-cream.  Drizzle with honey.  Let us know what you come up with !
