WOW. These are so good, super easy. I have been searching for really easy menu ideas. When I say easy I mean – baby napping in sling, 15 minute window of time – or less, nothing that can burn on the stove if I walk away and forget all about it, grab and go food kind of easy!!! These little fudge balls are the perfect late night nursing snack too!
- 1 cup Nuts (pre-soaked and dehydrated for best nutritional value) – I used a mix of walnuts, almonds, pecans
- 1 1/3 cup Dates (get a huge tub for $8.99 at Costo-Co)
- 1 tsp Vanilla
- 1/4 tsp Salt
- 1 tsp Raw Honey
- 4 TBS Cocoa Powder
DUMP IT ALL IN A FOOD PROCESSOR or VITA-MIX. FORM INTO BALLS. ENJOY!!!
<<disclaimer – I did just read that cocoa powder has a TON of phytic-acid. So I may recall this recipe in the near future 🙂 but seriously, for today… they are yummy and a girl has to eat something in the middle of the night!!!>>
